“Million Bucks” Soup
If you heard me say I might take this recipe down and keep it secret, you heard right. I called this soup “million bucks” soup because it genuinely makes you feel like a million bucks. And health is wealth right?
Filled with lentils, kale, fresh turmeric, lots of lemon and flavors like paprika, red pepper flakes and bay leaf, this soup is not only “healthy” but oh my goodness level of delish. Pair it with a piece of sourdough to dip in as you go and you my friend will be in pure heaven.

This is less of a recipe and more of a process. Any veggies, any base (Yogurt, Cottage Cheese, Labneh… or go for grits or oatmeal even!). FULL RECIPE, my way ⬇️ (& save this before you forget!) Savory Roasted Veggie + Lentil Yogurt Bowl (Breakfast designed but works for any meal.) Roasted Veggies: Tomatoes Red Onion Orange Bell Pepper Garlic Green Onion *lightly oiled, salt, pepper Roast at 400°F for 20–25 minutes until soft, caramelized, and jammy around the edges. Char marks = delish. Fully charred = not great. Yogurt Base: Plain Greek Yogurt Nutritional Yeast Salt to taste (if any) Stir together until lightly savory and creamy. Then Assemble! Greek yogurt base Cooked lentils (warm or room temp) Roasted veggies Chili crisp (from jar) Fresh chopped parsley Layer yogurt, then lentils, then veggies. Finish with chili crisp drizzle to spicy level you prefer and sprinkle of parsley. It’s that easy, and really flexible. Not a spicy fan? Take the chili crisp off, swap with a balsamic glaze or light swirl of hoisin sauce. No lentils? 😮💨 she’s gorgeous. Literally take me back right now to eating this because a lettuce/spinach/kale free salad was a *mood* and this came together so easily. I will never not be that weirdo in the grocery store smelling her tomato options and honestly, I think smell is an underrated under used sense when we are picking out fresh produce. Does it make you look strange? Yes. But guess who isn’t coming home with flavorless tomatoes? 🍅 You and me, that’s who. We know better. And we know that flavor = happiness and happiness = satisfaction and a job well done.
